We have made several recipes from Foodie & Fabulous and they are all so good! The Lemon-Blueberry cupcakes with Blueberry Cream Cheese frosting are amazing - so moist and flavorFULL! Our favorite though is the simple Caprese flatbread with spinach, tomatoes, Mozzarella, and basil. Many times when we make it, we make extra for our daughter and her family because they love it as much as we do! It is the type of recipe that is, also, easily customizable to use ingredients that you have on hand and nothing needs to be measured. We make this pretty often so we grow basil almost exclusively for Caprese! Esther makes the recipes simple - and simply delicious - and her photos are so artsy and enticing that I have many more recipes on the ‘must try’ list!
I would always get my weekly meal prep ideas from Esther. Her recipes are doable even for the most novice chef, but they make you feel like you’re a professional! They’re beautiful, colorful, and most importantly absolutely delicious! I try so many of her recipes and never fail to be completely dazzled by them. Years ago, a man tried one bite of her peach cobbler recipe (the best peach cobbler in the world) and immediately proposed to Esther. Come on! You can’t get better than that!
Esther and I worked together nearly 10 years ago and during that time, I had the pleasure of tasting some of her early cupcakes in real life at going-away parties and potlucks. I’m more of a pie girl than a cake fan, but each of her cupcake combinations was flavorful and baked to perfection. It was clear to me that Esther expressed her love and appreciation through her cupcakes and that love was vibrant! Around the time I moved across the country, Esther started her blog, Foodie and Fabulous. Perhaps out of nostalgia, I began baking some of her cupcake recipes (notably, the Lemon White Chocolate, Cranberry Orange, and Caramel Apple cupcakes). Then, I tried her Banana cinnamon rolls, which were incredible. I also made her various lemon bars (both the blueberry and white chocolate variations) and worked my way through a few other desserts before I started on her entrees. I still follow her on Instagram and cook some of her recipes!
I enjoyed Foodie & Fabulous so much that I wanted to share it with others! At the time, I was working at a hospital and creating a weekly newsletter with a featured recipes. With Esther’s permission, I used my platform to introduce a whole new group of people to her talents and creativity. Foodie and Fabulous was particularly suited for this audience in that many of the savory recipes were keenly tailored with healthy ingredients in mind without sacrificing layers of flavor.
